From Chianti Classico to Seaweed
Nina i Lofoten = Nina in Chianti
I am Nina, better known as Nina in Chianti, and live in Salzburg. I discovered my passion many years ago for Chianti Classico, the famous red wine of Tuscany. And for Panzano in Chianti, a small town in the heart of Chianti. Here I spend a large part of the year working: In my online shop NinainChianti.com I sell wine and olive oils from selected wineries and the products of Dario Cecchini, the famous butcher from Panzano. After all, good food and drink play a very important role in my life. And so it was actually a fish's fault that I travelled to Lofoten and discovered Lofoten Seaweed.
The cod
I discovered Lofoten in an article in a culinary magazine about cod. Skrei is the cod that returns every year between January and April to its spawning grounds in the Gulf Stream warmed waters around the Lofoten Islands. This fish is not only considered a speciality when fresh, but is also processed into the famous stockfish. My dream was to eat freshly caught skrei, to experience the Lofoten landscape up close and - very important - to stand under the wooden racks on which the stockfish dries.
From Lofoten. Weed Love.
During one of my visits to Lofoten I came across the products of Lofoten Seaweed - and I was thrilled! From the idea behind the products, from the quality, from the taste, from the design - simply from everything. Later I met the two friendly founders of Lofoten Seaweed, Tamara and Angelita. Then I decided that many more people should enjoy these unique products! Seaweed Recipes
As already mentioned, much of my life revolves around culinary delights, enjoying and thus inevitably cooking. It is for this very reason that I have tried out many ways to integrate Lofoten Seaweed products into various daily dishes and how they enhance existing flavours. But of course also about the positive health aspects of seaweed and algae. Nina on the Lofoten Islands
In March 2016 I was up north for the first time, between the 68th and 69th latitudes, in Lofoten. And what can I say: I was in love! The unique landscape, the warm people and the natural tranquillity of this archipelago. I will never forget my first Lofoten fish soup. But above all the stockfish was my favourite. And as a passionate hobby chef and gourmet I wanted to learn more about the cuisine of the untamed islands...
